Sausage Skillet Pasta

One day I found this recipe on Pinterest for Sausage Asparagus Quinoa Pasta. I was on a health kick and trying to cut out gluten. Quinoa pasta? Must be healthy! I bought the ingredients that I thought I needed to buy but later realized I was wrong. I purchased the wrong sausage and did not want to buy asparagus (am I the only adult who doesn’t like asparagus?). Since my first attempt, I have tweaked this recipe into something completely different that is still healthy and filling. It has become my husband’s favorite meal! I have aptly named this dinner Sausage Skillet Meal. Creative, I know. And the best part? It only takes about 30 minutes from start to finish.

Ingredients (not all pictured)

 

    • 1 turkey kielbasa sausage
    • 2 cups of pasta (I have use rotini, fusilli, and penne pastas)
    • 1 cup green beans– fresh or frozen
    • ½ cup yellow onion, chopped
    • 2 cloves garlic, minced
    • ½ tsp chili pepper
    • Salt and pepper, to taste
    • Olive oil
  • Optional: 1 cup broccoli florets
  • Optional: ¼ c. parmesan cheese, shredded

Directions

  1. Cook the pasta according to the box instructions. Drain and set aside for later use. Mix a little olive oil in to keep the pasta from sticking together.
  2. As the pasta cooks, slice the sausage. Add a little bit of olive oil to a skillet and cook the sausage. Allow time to brown a little bit– 10-15 minutes.
  3. After the meat is cooked, add the garlic and onions to the skillet. Cook together over medium heat until onions and garlic are fragrant. Onions will be golden brown.
  4. Add in your green beans (and broccoli, if you’re using it). Allow ingredients to cook together for 3-5 minutes. You may need to add a little more olive oil to keep food from sticking to the skillet– use your discretion! **If green beans are frozen, you may need to cook a little longer.
  5. Mix in your cooked pasta.
  6. Add chilli pepper, salt, and pepper. Mix well.
  7. Adjust seasoning and olive oil to taste.
  8. Remove from heat and top with parmesan cheese.
